  • 2 fresh eggs

Wash the sweet potatoes thoroughly. Place them in the air fryer basket and cook at 180°C (350°F) for about 30 minutes, or until they are tender and soft when pierced with a fork. Ensure they are cooked through.

Carefully peel the skin off the cooked sweet potatoes while they are still warm, which makes peeling easier. Mash the sweet potatoes in a bowl using a fork or a masher until smooth. If they are very hot, let them cool slightly.

Separate the egg whites from the yolks. Place the egg whites in a clean, dry bowl for making meringue. Keep the egg yolks in a separate bowl.

Using an electric mixer or a whisk, beat the egg whites until they become foamy. Gradually add the 1 Tbsp of sugar and 1 Tbsp of lemon juice while continuing to beat. Whip until stiff peaks form – this means when you lift the whisk, the meringue holds its shape with a pointy tip.

Add the 2 egg yolks to the mashed sweet potatoes and mix gently until just combined. Avoid overmixing, as it can make the batter too dense.

Stir in the 2 Tbsp of milk into the sweet potato and yolk mixture. If the batter seems too stiff, you can add a little more milk until it reaches a smooth consistency.

Gently fold the stiffly beaten meringue into the sweet potato batter. Add the meringue in 2-3 additions, carefully folding it in with a spatula. Use an under-and-over motion to avoid deflating the meringue, which will keep the bread light and fluffy.

Prepare your baking molds by lining them with parchment paper or lightly greasing them. Spoon the sweet potato batter into the prepared molds, filling them about 70-80% full. Smooth the top surface for a neater appearance.
