I tried making the trending ‘Mayak Gyeran’ (Addictive Eggs) myself, and it’s an absolute rice thief! Hahaha.

Ingredients

  • 8 eggs
  • 2/3 cup soy sauce
  • 2/3 cup water
  • 1 Tbsp sugar
  • 1 Tbsp corn syrup (or oligodang)
  • 1 Tbsp sesame oil
  • 1 to 1.5 Tbsp minced garlic
  • 1/2 onion
  • 1 cheongyang pepper (omit if you don’t like spicy)
  • 7-8 stalks green onions (or about 1/4 of a large scallion)
  • Plenty of sesame seeds

Cooking Instructions

Step 1

First, take the 8 eggs from the refrigerator and let them sit at room temperature for about 30 minutes before boiling. This helps prevent them from cracking while cooking. Fill a pot with enough water to cover the eggs and add about 1/2 teaspoon of coarse salt. Once the water boils, carefully add the eggs and boil for about 8 minutes. Boiling the eggs to a perfect soft-boiled state is crucial for Mayak Gyeran!

While the eggs are boiling, let’s prepare the other ingredients. Finely chop the green onions (or large scallion). Mince the onion and cheongyang pepper. Having the vegetables finely chopped will help the marinade permeate the eggs evenly.

Now, let’s make the flavorful marinade that will define the taste of your Mayak Gyeran. Using a standard paper cup, measure 2/3 cup of soy sauce and 2/3 cup of water (a 1:1 ratio is key!) and pour them into a mixing bowl.

To the soy sauce and water mixture, add 1 tablespoon of sugar, 1 tablespoon of corn syrup, and 1 tablespoon of sesame oil. Stir well. Then, add 1 to 1.5 tablespoons of minced garlic and all the finely chopped vegetables you prepared earlier. Finally, sprinkle in plenty of sesame seeds for extra flavor and aroma. Your delicious Mayak Gyeran marinade is now ready!

Once the eggs are boiled, briefly cool them in cold water before carefully peeling off the shells. (Peeling soft-boiled eggs can be a bit tricky!) Place the peeled eggs into the prepared marinade. Ensure the eggs are fully submerged in the marinade for best results.

Mayak Gyeran tastes best when marinated in the refrigerator for at least one day. After a day of marinating, you’ll notice that the eggs have beautifully absorbed the dark color of the soy sauce, much like a traditional Korean ‘jangjorim’ (braised soy sauce dish).

Place the well-marinated Mayak Gyeran on top of warm rice. Slicing one in half to reveal the creamy, runny yolk is a delightful sight! If you like, drizzle a little extra marinade over the top for an intensified flavor.
