I was craving a thick, Chinese-style egg drop soup, and then I saw shrimp wontons being sold! I decided to add them to the soup, and it turned into a surprisingly elegant and delicious dish. Enjoy a hearty and satisfying meal with this recipe, featuring the perfect harmony of soft eggs, bouncy shrimp wontons, and a rich, flavorful broth.

Main Ingredients

  • 2 fresh eggs
  • A little carrot (thinly julienned)
  • A little green onion (finely chopped)
  • 4 frozen shrimp wontons (available at supermarkets)

Seasoning & Broth Ingredients

  • 2 Tbsp soy sauce
  • 1 Tbsp chicken powder (chicken bouillon powder)
  • Pinch of black pepper
  • 1.5 Tbsp cornstarch (mixed with 2 Tbsp water beforehand)
  • 500cc water (approx. 2 cups)

Cooking Instructions

Step 1

Pour 500cc of water into a pot. Add 2 Tbsp soy sauce and 1 Tbsp chicken powder, and bring to a boil over high heat. This step is to create the base flavor of the broth.

Once the broth starts boiling, add the thinly julienned carrots. Cook until the carrots are tender. The carrots will add a subtle sweetness to the soup as they cook.

While the carrots are cooking, crack 2 eggs into a bowl. Beat them thoroughly with a fork or chopsticks, making sure to break up any stringy bits (chalazae) for a smoother texture.

We’re using commercially available frozen shrimp wontons for this recipe. They’re convenient as they don’t require any special preparation before cooking.

When the broth comes to a boil again, add the finely chopped green onions to infuse the soup with their fresh aroma. The refreshing scent of green onions will enhance the overall flavor profile.

Carefully add the 4 prepared frozen shrimp wontons to the pot. They are cooked when they float to the surface.

Once the shrimp wontons are cooked, sprinkle a pinch of black pepper to remove any gamey odors and add a touch of spice. This helps balance the flavors of the soup.

Gently stir the soup with a ladle. Then, slowly drizzle the beaten eggs in a circular motion from the edge of the ladle into the simmering soup. Crucially, do NOT stir vigorously with chopsticks! This will allow the egg to cook into beautiful, wispy strands, creating the classic egg drop soup appearance.

Finally, take the pre-mixed cornstarch slurry (1.5 Tbsp cornstarch + 2 Tbsp water) and pour it into the pot, again drizzling it around the edges.
