Ingredients

  • 2 slices of toast bread
  • 2 eggs
  • 2 crab sticks (imitation crab meat)
  • Ketchup, to taste
  • Coleslaw dressing, to taste
  • Brown sugar, to taste
  • Canola oil

Cooking Instructions

Step 1

In a bowl, crack 2 eggs. Then, tear the crab sticks along their natural grain into bite-sized pieces and add them to the bowl with the eggs. Tearing them into larger pieces rather than finely shredding will give a better texture.

Gently whisk the eggs and torn crab sticks together using a fork or whisk until just combined. You don’t need to overmix; just ensure the egg is broken up and the crab sticks are incorporated.

Heat a lightly oiled frying pan over medium-low heat. Pour in the egg and crab stick mixture. Swirl the pan gently to spread the mixture into a thin, even layer, like a pancake.

Once the egg mixture starts to set, carefully flip it with a spatula. Cook until golden brown on both sides, creating a thick omelet-like patty. Remove from the pan and set aside.

Prepare the toast bread. Spread a thin layer of ketchup evenly on one side of each slice of bread. Sprinkle a little brown sugar over the ketchup for a sweet and savory flavor contrast. Adjust sugar to your preference.

Cut the cooked crab stick and egg patty into a square shape that fits the size of your toast bread. Place the cut patty on top of the ketchup and sugar-spread side of one slice of bread.

Next, drizzle the coleslaw dressing generously over the crab stick and egg patty. If you don’t have coleslaw dressing, a creamy mustard sauce works wonderfully as a substitute. Tip: To prevent the sauce from oozing out the sides when grilling, try to apply it mainly in the center of the patty. If sauce does tend to spread, apply it in a slightly thicker line and then spread it gently inwards.

Place the other slice of bread on top of the dressed patty to complete the sandwich structure.

Close the lid of your toast maker and place the assembled sandwich inside. If you don’t have a toast maker, you can grill it in a frying pan with a little butter over low heat until golden brown on both sides.
