Ingredients- 1/2 cup fresh oysters
- 1/2 cup dried seaweed (or *maesangi* seaweed)
- 1 cup radish, thinly sliced
- 1/3 cup green onion, chopped
- 3 cups water
- 3 tablespoons shrimp paste (use only the liquid)
- 1/3 tablespoon coarse sea salt (for seasoning adjustment)
- 1 tablespoon minced garlic
- A drizzle of sesame oil (for finishing)
Cooking Instructions
Step 1
1. In a pot, combine 3 cups of water, 1 cup of thinly sliced radish, and 1/3 tablespoon of coarse sea salt. Bring to a boil over medium heat and cook until the radish is tender and translucent. This step helps create a clear and refreshing broth.
Step 2
2. Once the broth is at a rolling boil, add the dried seaweed (or *maesangi*). Use chopsticks to gently loosen and separate the seaweed so it doesn’t clump together. Let it simmer for about 1 minute to infuse its oceanic aroma into the soup.
Step 3
3. After adding the seaweed, bring the soup back to a boil. Then, add the 1/2 cup of fresh, cleaned oysters. Oysters cook quickly; avoid overcooking to keep them tender. Simmer for just 1-2 minutes until they are cooked through.
Step 4
4. Now, add the remaining ingredients to enhance the flavor. Stir in the 1/3 cup of chopped green onion and 1 tablespoon of minced garlic. Continue to simmer for a short while. (Optional: Thinly sliced red chili pepper can be added for color and a hint of spice.)
Step 5
5. To achieve a clear and clean taste, we’ll use the liquid from the shrimp paste. Measure out 3 tablespoons of the shrimp paste liquid and stir it into the soup for seasoning. This method prevents the broth from becoming cloudy. Taste and adjust the saltiness with additional sea salt if needed.
Step 6
6. Once everything is well combined and simmering, turn off the heat. Just before serving, add a small drizzle of sesame oil. The nutty aroma of the sesame oil will beautifully complement the flavors of the oysters and seaweed. Your delicious Oyster and Seaweed Soup is ready!
