Hearty and Delicious Potato Gnocchi Tteokguk

This recipe features a simple yet satisfying Potato Gnocchi Tteokguk, made with frozen potato gnocchi and chewy tteokguk rice cakes. We’re adding plenty of stew vegetables for depth of flavor and seasoning it perfectly with soup soy sauce and salt. Using pre-made broth will enhance the rich taste even further. If you want to make your solo meal special, elevate it with a sprinkle of perilla seed powder and shredded seaweed. This recipe will help you create a fulfilling and delicious meal.

  • Tteokguk rice cakes 100g
  • Frozen potato gnocchi 150g
  • Minced garlic 1 tsp

Cooking Instructions

In a deep pot, pour 400ml of the prepared dried pollack broth. Add 1 tsp of minced garlic, 2 Tbsp of chopped green onion, 2 Tbsp of stew vegetables, and 1 Tbsp of soup soy sauce. Seasoning the base like this beforehand makes adjusting the final taste much easier. For the broth, it’s best to use one made by simmering dried pollack heads, anchovies, kelp, and shrimp for a deeper, richer flavor. (Note: If dried pollack broth isn’t available, you can use store-bought broth or anchovy-kelp broth.)

First, add 1 tsp of black pepper to the prepared broth for added aroma, and bring it to a boil over high heat. It’s important to let it simmer so all the ingredients meld together beautifully.

Once the broth is boiling vigorously, add 100g of tteokguk rice cakes and 150g of frozen potato gnocchi. Cook until the rice cakes are soft and the gnocchi floats to the surface. After confirming the potato gnocchi is fully cooked, adjust the seasoning with 1 tsp of salt. You can modify the amount of salt according to your preference.

When the rice cakes and gnocchi are cooked and the soup comes to another boil, add the secret ingredient: 1 Tbsp of perilla seed powder! Adding perilla seed powder will give it a nutty, creamy texture, reminiscent of kalguksu or sujebi, offering a deep flavor. Once the perilla seed powder is well incorporated, turn off the heat.

Ladle the finished Potato Gnocchi Tteokguk into a warm bowl. Sprinkle 2 Tbsp of shredded seaweed (gim) on top for presentation. Finally, drizzle with 1 tsp of sesame oil and a sprinkle of 1 Tbsp of toasted sesame seeds to complete your very own ‘Potato Gnocchi Tteokguk’! Enjoy a satisfying and elegant meal, even when dining alone.
