Main Ingredients

  • 6 medium potatoes
  • 4 eggs
  • 1/2 carrot
  • 3 chili peppers (adjust to your spice preference)

Dressing Ingredients

  • 10 tablespoons mayonnaise
  • 3 tablespoons mustard
  • Pinch of black pepper

Cooking Instructions

Step 1

First, let’s prepare to boil the potatoes and eggs. Wash the potatoes thoroughly and place them in a pot. Add the eggs to the same pot. Pour in enough water to fully cover the potatoes and bring it to a boil over high heat. Once boiling, reduce the heat to medium and cook for about 20-25 minutes, or until the potatoes are tender when pierced. For hard-boiled eggs, cook for about 10-12 minutes, then rinse them under cold water to cool.

Step 1

Step 2

While the potatoes are boiling, finely chop the carrot and chili peppers. Peel the carrot and dice it into very small cubes or mince it finely. Remove the seeds from the chili peppers and chop them finely as well. If you enjoy a spicier kick, you can leave the seeds in, but if you’re sensitive to heat, adjust the quantity or omit them.

Step 2

Step 3

It’s much easier to peel the potatoes while they are still warm. Once peeled, place the potatoes in a bowl and mash them until smooth using a fork or a potato masher. Leaving a few small lumps can add a nice texture. Peel the cooled hard-boiled eggs and mash them with a fork or finely chop them.

Step 3

Step 4

Now it’s time to combine all the ingredients. Add the chopped carrot and chili peppers to the mashed potatoes and eggs. Next, add the dressing ingredients: mayonnaise, mustard, and a pinch of black pepper. Use a spatula or spoon to mix everything thoroughly until well combined. Your delicious potato egg salad is ready! Taste and adjust seasoning if needed, perhaps adding a little salt or sugar according to your preference.
