Core Ingredients- 150g fresh zucchini leaves
- 1 pack commercial dashi (anchovy and kelp) broth pack
- 1.5L clear water
- 2 Korean green chilies (Cheongyang peppers)
- 1 red chili pepper
- 1 green onion
- 1/2 cup raw soybean powder
- 2 Tbsp soy sauce for soup (Guk-ganjang)
- 2 Tbsp soybean paste (Doenjang)
- Pinch of salt, to taste
Cooking Instructions
Step 1
First, wash and prepare all the ingredients for the dish. Fresh ingredients are the foundation of a delicious soup.
Step 2
Finely chop the green and red chili peppers after removing the seeds. Slice the green onion diagonally. These additions will enhance the soup with vibrant color, mild spiciness, and a fresh aroma.
Step 3
It’s important to prepare the tough stems of the zucchini leaves. Gently snap the tip of a stem and pull downwards to easily peel off the thin outer skin. This step ensures the zucchini leaves become tender.
Step 4
Zucchini leaves are packed with nutrients! Their abundant calcium supports bone health, and their low calorie count makes them great for dieting. Additionally, rich dietary fiber aids in preventing constipation, while lutein, vitamin A, and beta-carotene are beneficial for eye health. The high chlorophyll content also offers excellent benefits for preventing chronic diseases and has anti-cancer properties.
Step 5
Rinse the prepared zucchini leaves thoroughly under running cold water 3-4 times, gently rubbing them with your hands. After draining, cut the leaves into bite-sized pieces.
Step 6
Place the chopped zucchini leaves in a bowl and add the raw soybean powder. Gently mix with your hands to coat the zucchini leaves evenly with the soybean powder. This coating will add a rich, nutty flavor to the soup.
Step 7
In a pot, add 1.5L of clear water and the dashi pack. Simmer for 15-20 minutes to create a flavorful broth. Remove the dashi pack, then dissolve 2 tablespoons of soybean paste into the broth. Add all the soybean powder-coated zucchini leaves.
Step 8
After adding the zucchini leaves, let the soup simmer gently for about 5 minutes without stirring. This allows the soybean powder to dissolve properly without clumping.
Step 9
Add 2 tablespoons of soy sauce for soup to season, and adjust the taste with salt if needed. Finally, add the chopped chilies and green onion and continue to simmer.
Step 10
Simmer for another 3 minutes for all the ingredients to meld together, and your savory zucchini leaf soybean paste soup with soybean powder is complete! Enjoy it warm for the best taste.
