First, thoroughly wash the cucumber and pat it dry. Slice it thinly on a diagonal (bias cut). Set aside. Now, prepare the eggs for boiling. You can boil them in a pot for about 30 minutes until hard-boiled. Alternatively, a rice cooker’s ‘quick cook’ function can cook them in approximately 20 minutes.

Place the sliced cucumber in a bowl and sprinkle with 1 tsp of coarse salt. Let it sit for at least 10 minutes to draw out excess moisture. After salting, gently rinse the cucumber slices under cold running water and then squeeze them firmly to remove any remaining water. This step ensures the cucumber stays crisp in the salad.

Once the eggs are hard-boiled, peel them while they are still warm. Using a fork, potato masher, or the back of a spoon, mash the eggs until they are broken down into small pieces. Aim for a consistency where there are no large chunks of egg white or yolk.

In a mixing bowl, combine the mashed eggs with the dressing ingredients: 3 Tbsp mayonnaise, 1 Tbsp mustard, and a pinch of black pepper. Stir until well combined.
