Main Ingredients- 120g dried shredded squid (cham jinmichae)
- A little cooking oil (for coating the pan)
Seasoning Ingredients- 2 Tbsp chopped green onion
- 1 tsp minced garlic
- 1 tsp soy sauce (jin ganjang)
- 1 tsp anchovy sauce (or fish sauce)
- 1 Tbsp sesame oil
- A pinch of sesame seeds
- 2 Tbsp chopped green onion
- 1 tsp minced garlic
- 1 tsp soy sauce (jin ganjang)
- 1 tsp anchovy sauce (or fish sauce)
- 1 Tbsp sesame oil
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, cut the dried shredded squid into bite-sized pieces, about 2-3 cm long. Finely chop the green onion. Preparing the ingredients in advance will make the cooking process much smoother.
Step 2
The first secret to making the dried shredded squid tender! Add the prepared dried shredded squid to boiling water and blanch for exactly 30 seconds. Be careful not to over-blanch, as it can become mushy. Immediately drain in a colander to remove all excess water.
Step 3
Lightly oil a heated pan. Add the chopped green onion and minced garlic, and stir-fry over medium-low heat until fragrant. It’s important to bring out the savory aroma of the green onion and garlic without burning them.
Step 4
Once the green onion and garlic are golden brown, quickly stir in the soy sauce and anchovy sauce. Be mindful of the heat to prevent the seasonings from burning.
Step 5
Now, add the drained dried shredded squid to the pan and mix well with the seasonings. Turn off the heat immediately and mix, using the residual heat to allow the sauce to evenly coat the squid. This is the key to maintaining its tenderness.
Step 6
Once the seasonings are somewhat mixed, turn the heat back on to low and stir-fry for just about 30 seconds to 1 minute. Be careful not to overcook, as it can become tough. Turn off the heat, drizzle generously with sesame oil, and sprinkle with sesame seeds to finish.
Step 7
Your soft and delicious stir-fried dried shredded squid is ready, with a wonderful savory sesame oil aroma and a sweet and salty taste! Serve it over warm rice, or enjoy it as a hearty side dish.
