Main Ingredients- Fresh zucchini leaves
- 1 Cheongyang pepper
- A little bit of chives
Wraps Seasoning- 2 Tbsp Soy sauce
- 1 Tbsp Plum extract
- 1/2 Tbsp Sesame oil
- 1/2 Tbsp Toasted sesame seeds
- 2 Tbsp Soy sauce
- 1 Tbsp Plum extract
- 1/2 Tbsp Sesame oil
- 1/2 Tbsp Toasted sesame seeds
Cooking Instructions
Step 1
Prepare the zucchini leaves, which are at their peak season right now. If they’re freshly picked from the garden, they’ll be even more vibrant and aromatic.
Step 2
First, peel the long, tough skin from the stems of the zucchini leaves. Gently peeling by hand will make the leaves much more tender.
Step 3
Submerge the zucchini leaves in clean water with a little vinegar (about 1-2 Tbsp per liter of water) for about 5 minutes. Vinegar helps remove impurities and adds a sanitizing effect.
Step 4
Rinse the zucchini leaves, which have been soaking, thoroughly under running water, leaf by leaf, on both sides. It’s important to wash them carefully to ensure no dirt or debris remains.
Step 5
Drain the washed zucchini leaves on a colander, making sure they don’t overlap too much. Don’t let them sit too long, or they might wilt.
Step 6
Fill a steamer pot with water and bring it to a boil. If you don’t have a steamer, you can place a colander over a pot of boiling water.
Step 7
Once the steam is rising, take handfuls of the prepared zucchini leaves and layer them in the steamer, alternating the direction of the leaves. Avoid stacking them too high, as this can prevent even cooking.
Step 8
Depending on the thickness and amount of the leaves, steam them for about 5 to 10 minutes until tender. Thinner leaves may only need 5 minutes.
Step 9
Turn off the heat and let the zucchini leaves sit in the closed steamer for another 1-2 minutes. This residual heat will make the leaves even more tender and moist.
Step 10
Carefully remove the zucchini leaves from the steamer. They should be perfectly tender and ready for wrapping.
Step 11
Finely chop the chives and Cheongyang pepper. If you enjoy a spicier taste, feel free to add more Cheongyang pepper.
Step 12
Now, let’s make the delicious seasoning for the wraps. In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp plum extract, 1/2 Tbsp sesame oil, and 1/2 Tbsp toasted sesame seeds. Mix well. Add the chopped chives and Cheongyang pepper, and mix again to create your savory wrap seasoning. (Tip: You can also make a richer, deeper flavored dipping sauce using store-bought ssamjang, or by mixing soybean paste, gochujang, plum extract, minced garlic, sesame oil, and sesame seeds for an extra delicious treat. Ssamjang ingredients: 3 Tbsp Soybean paste, 1 Tbsp Gochujang, 1 Tbsp Plum extract, 1/3 Tbsp Minced garlic, a little Sesame oil, a little Toasted sesame seeds)
Step 13
Arrange the tender, steamed zucchini leaves attractively on a serving dish. It’s best to lay them out neatly for easy wrapping.
Step 14
Spoon a generous amount of the prepared seasoning over the zucchini leaves. Everything is ready for wrapping! Fancy a bite of these mouthwatering zucchini leaf wraps?
Step 15
Serve with a refreshing chilled soybean sprout soup for an even more complete meal. Enjoy the zucchini leaves rolled up as wraps or as ssimbap (rice wrapped in leaves). The freshness of these seasonal zucchini leaves will fill your mouth with delightful flavor.
