Main Ingredients

  • 3-4 burdock roots
  • 2-3 Tbsp vinegar

Seasoning

  • 1 cup water
  • 1/3 cup soy sauce
  • 2 Tbsp brown sugar
  • 2 Tbsp corn syrup (or rice syrup)
  • 1 Tbsp white sugar
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

First, prepare the burdock roots. Wash them thoroughly to remove any soil. Using a peeler or knife, carefully peel the skin. If not using immediately, soak the peeled burdock root in water to prevent browning.

Cut the peeled burdock root into approximately 5cm (2-inch) lengths. Then, thinly julienne them. This will help the seasoning penetrate better and result in a tender texture. In a pot of boiling water, add 2-3 tablespoons of vinegar and blanch the julienned burdock root for 1-2 minutes. This step removes any bitterness and enhances the crispness. After blanching, rinse the burdock root under cold water and drain well.

Now, let’s make the delicious braising sauce. In a bowl, combine the water, soy sauce, brown sugar, corn syrup, white sugar, and minced garlic. Stir well until the sugars are dissolved. Using brown sugar contributes to a richer, more appealing color for the burdock root dish.

Heat a pan over medium heat. Pour in the prepared braising sauce and bring it to a boil. Once the sauce is simmering, add the drained burdock root. Reduce the heat to medium-low, cover the pan, and let it simmer, stirring occasionally, for about 15-20 minutes, allowing the flavors to meld and the burdock root to absorb the seasoning.

When the sauce has reduced and thickened, remove the lid and increase the heat to medium-high. Continue to cook, stirring frequently, until most of the liquid has evaporated and the burdock root is coated in a glossy glaze. Be careful not to burn it. Stirring constantly will ensure an even sheen.

Turn off the heat. Drizzle in a teaspoon of sesame oil and sprinkle with toasted sesame seeds. Your delicious glazed burdock root is ready! Serve it with warm rice for a satisfying and healthy side dish that keeps well.
