How to Cook Delicious Chicken and Burdock Root Rice in a Pressure Cooker
Packed with protein from tender chicken and a satisfying chew from burdock root, this rice dish is infused with a savory soy sauce seasoning that deepens in flavor with every bite. It’s a truly comforting and wholesome meal.
Ingredients- 1 cup rice
- 1/2 burdock root
- 70g chicken thigh meat
- 2 sheets dried tofu (aburaage)
- 1/2 carrot
- 1 cup dashi broth (made from kombu)
- 1 Tbsp sesame oil
- 2 Tbsp soy sauce
- 1 Tbsp mirin (or cooking sake)
Cooking Instructions
Step 1
First, rinse the 1 cup of rice thoroughly. After rinsing, drain the rice and let it sit in a sieve for at least 30 minutes. Soaking the rice allows it to cook more evenly and become wonderfully chewy.
Step 2
A good dashi broth is key to delicious rice! In 1 cup (200ml) of water, add 1 piece of kombu (dried kelp) and let it steep for about 10 minutes to create a fragrant dashi broth. Be careful not to steep the kombu for too long, as it can impart a bitter taste.
Step 3
Heat a pan over medium heat and add 1 tablespoon of sesame oil. Add the julienned carrot, thinly sliced burdock root, and chicken thigh meat cut into bite-sized pieces. Sauté until the chicken is no longer pink and is partially cooked. Stir-frying helps to release their flavors.
Step 4
Once the chicken is about halfway cooked, add the thinly sliced dried tofu to the pan. Continue to stir-fry for a minute. Then, add 2 tablespoons of mirin (or cooking sake) for a touch of sweetness and 2 tablespoons of soy sauce for that savory depth. Stir-fry for another 2-3 minutes until everything is well combined and the sauce has slightly coated the ingredients.

Now it’s time to assemble the rice in the pressure cooker. Add the drained, soaked rice to the bottom of the pressure cooker. Spread the sautéed chicken, vegetables, and tofu evenly over the rice. Pour in the prepared dashi broth (making sure to remove the kombu first) as the cooking liquid.

Cooking rice in a pressure cooker! Bring the rice to a boil over high heat. Once the steam starts escaping and the pressure regulator begins to whistle, reduce the heat to low and cook for about 5 minutes. After 5 minutes, turn off the heat completely and let the rice steam, covered, for 10 minutes. This steaming process ensures the rice is perfectly cooked, moist, and fluffy.

Your delicious Chicken and Burdock Root Rice is ready! Once the steaming time is up, carefully open the pressure cooker. Gently fluff the rice with a rice paddle, being careful not to mash the grains. Serve in bowls and enjoy this flavorful and nutritious meal!
