Ingredients

  • 2 cups white rice (approx. 300g, for 2 servings)
  • 200g bean sprouts (generous amount)
  • 2 cups water (same as rice quantity)
  • 1/2 tsp sesame oil (optional)
  • Pinch of sesame seeds (optional)

Cooking Instructions

First, prepare the rice, which is key to the flavor of bean sprout rice. Rinse 2 cups of rice thoroughly. When rinsing, don’t rub too hard; just rinse 2-3 times until the water runs clear. Drain the rinsed rice in a colander and let it sit for a moment.

Wash the bean sprouts under running water. You don’t need to trim them; you can use them whole. Spread the washed 200g of bean sprouts evenly over the drained rice.

Add 2 cups of water for cooking the rice. You might need to adjust the water amount depending on the type of rice or how long it was soaked, but generally, a 1:1 ratio of rice to water works well. Since bean sprouts release moisture, it’s good to use slightly less water than you normally would for plain rice. Cook the rice using the ‘White Rice’ setting on your rice cooker. (For microwave: Cook for 10 minutes for 2 servings, then let steam for 5 minutes).

Don’t open the lid immediately after the rice is done! Steaming is crucial. After the rice cooker switches to the ‘Keep Warm’ mode, wait for another 2-3 minutes before opening the lid. Gently mix the rice with a spatula to prevent clumping. This allows the moisture from the bean sprouts to evenly distribute, resulting in moist and delicious bean sprout rice.

Finally, enjoy the bean sprout rice with the fragrant wild chives soy sauce. Wash the wild chives, chop them finely, and mix them with soy sauce, red pepper flakes, sesame oil, sesame seeds, and (optional) minced garlic. Mixing a generous amount of this sauce into warm bean sprout rice is absolutely delicious! For extra flavor, you can drizzle a little sesame oil and sprinkle sesame seeds on top.
