Main Ingredients

  • 2 medium New Potatoes
  • 1 medium New Onion
  • 1/4 Carrot
  • 1/4 Green Onion (only the green parts)

Seasoning

  • 2 Tbsp Olive Oil
  • 1 tsp Fine Salt (or to taste)
  • 1 tsp Sesame Oil
  • A pinch of Sesame Seeds

Cooking Instructions

Step 1

First, wash the new potatoes thoroughly and peel them. Slice them into strips about 0.5cm thick, slightly thicker than usual. Cutting them thicker will help them retain their texture and prevent them from breaking apart during sautéing.

Rinse the sliced potatoes in cold water 2-3 times to remove excess starch. Drain them completely in a colander. Leaving water on the potatoes can cause splattering when sautéing and make them mushy.

Slice the new onion into strips slightly thicker than the potato strips. Cutting the onion a bit thicker ensures it doesn’t become too soft when cooked and maintains a similar texture to the potatoes.

Julienne the carrot to a similar thickness as the potatoes and onions. Finely chop the green parts of the green onion. Using only the green parts adds a milder aroma compared to the white parts.

Heat 2 tablespoons of olive oil in a pan over medium heat. Add the drained potato slices and sauté for about 2-3 minutes until they start to look slightly translucent. Then, add the julienned carrots and continue to sauté.

Once the potatoes and carrots are partially cooked, add the sliced onions. Sauté until the onions become completely translucent and sweet. Season gradually with 1 teaspoon of fine salt, tasting as you go to adjust to your preference. It’s best to add salt little by little rather than all at once.

When the onions are fully translucent and their sweetness is released, add the chopped green onion leaves and sauté for another 1-2 minutes to infuse their aroma. Be careful not to overcook, as this can diminish the green onion’s fragrance.

Just before you turn off the heat, cover the pan with a lid and completely turn off the stove. Let it steam for 3-5 minutes using the residual heat of the pan. This crucial step allows the potatoes to cook through to a tender, fluffy consistency without being crunchy.

After 3-5 minutes, remove the lid. Drizzle with 1 teaspoon of sesame oil and sprinkle with a pinch of sesame seeds. Gently toss everything together to combine. Your delicious sautéed potatoes with new onions are ready!
