Today, I prepared a delicious and convenient meal using a quick-fix option. I’d heard about the trend of tofu noodles but hadn’t tried them yet. Then, I spotted a buy-one-get-one deal and immediately added them to my cart. These noodles, paired with anchovy broth sauce, are perfect for a quick and easy meal.

Cooking Instructions

The product packaging shows a very appetizing image of the noodles prepared with shiitake mushrooms, zucchini, and carrots. However, today, I’m opting for simplicity and will just top mine with a simple egg garnish. Quick meals should be enjoyed the quick way! For your reference, one package contains two servings.

The ingredients for today are: 2 packs of soy protein noodles, 2 packs of anchovy noodle sauce, and 2 packs of vegetable garnish to add flavor. These noodles have a wonderfully soft and springy texture.

I’ll follow the instructions on the package. It’s incredibly convenient as it doesn’t require a pot and can be prepared using just a microwave. If you don’t have a microwave, you can also heat it in a pot on the stovetop. This is my first time, so I’m using the microwave method.

Before cooking, place the soy protein noodles in a colander and rinse them under running water to drain. This helps to enhance their texture.

Now, prepare 300ml of water. First, mix the anchovy noodle sauce with the soy protein noodles, ensuring they are well combined. Then, arrange the vegetable garnish on top and microwave for 5 minutes and 30 seconds.

Finally, I made a thin omelet, which is a classic topping for anchovy noodles, and placed it on top. The addition of yellow egg makes it look even more appetizing and enhances the overall flavor. And just like that, a simple yet delicious bowl of anchovy noodles is ready!
