A Rice-Thief Main Dish: Jeju Hairtail Stew
A piping hot, spicy, and flavorful hairtail stew. Pouring the seasoned broth over warm rice and mashing the tender radish to mix is absolutely delicious. It’s a perfect side dish that makes you want to finish your rice in no time!
Main Ingredients- 2 heads of fresh Jeju hairtail (Galchi)
- 650ml Dashi broth (anchovy and kelp stock)
- 370g Radish (Mu)
- 1 stalk Green onion (Daepa)
- 1/2 Onion (Yangpa)
- 2 Korean green chili peppers (Cheongyangcho)
Seasoning Mix- 2 Tbsp Tuna extract (Chamchi-aek)
- 1 Tbsp Fish sauce (Kkanari aekjeot)
- 3 Tbsp Soy sauce (Ganjang)
- 1 Tbsp Minced garlic (Dajin maneul)
- 1 Tbsp Red pepper flakes (Gochugaru)
- 1 Tbsp Red pepper paste (Gochujang)
- 2 Tbsp Cooking wine (Masul)
- A pinch of Black pepper (Huchu)
- A little Sugar (Seoltang)
- 2 Tbsp Tuna extract (Chamchi-aek)
- 1 Tbsp Fish sauce (Kkanari aekjeot)
- 3 Tbsp Soy sauce (Ganjang)
- 1 Tbsp Minced garlic (Dajin maneul)
- 1 Tbsp Red pepper flakes (Gochugaru)
- 1 Tbsp Red pepper paste (Gochujang)
- 2 Tbsp Cooking wine (Masul)
- A pinch of Black pepper (Huchu)
- A little Sugar (Seoltang)
Cooking Instructions
Step 1
First, let’s prepare the vegetables. Slice the onion thinly into strips. Cut the green chili peppers and green onions diagonally. These cuts will enhance the flavor depth and visual appeal of the stew.
Step 2
Radish becomes wonderfully tender and sweet when simmered in stew! Slice it into thick pieces, about 1 cm thick, and place them at the bottom of the stew pot. The radish will release its natural sweetness as it cooks, enriching the stew’s overall flavor.
Step 3
Arrange the cleaned and cut hairtail pieces over the radish. For a cleaner broth and smoother texture, it’s recommended to scrape off the scales from the hairtail before cutting and adding it to the pot.
Step 4
Now, let’s make the delicious seasoning mix. Pour 650ml of dashi broth into the pot. Add 2 Tbsp tuna extract, 3 Tbsp soy sauce, 1 Tbsp gochujang, 1 Tbsp gochugaru, 2 Tbsp cooking wine, a pinch of black pepper, a little sugar, and 1 Tbsp minced garlic. Stir well to combine the seasonings. (Tip: You can pre-mix all the seasoning ingredients in a small bowl for easier seasoning.)

Pour the seasoned broth over the ingredients in the pot and bring to a boil over high heat. Once boiling, add the prepared onion, green onion, and chili peppers. Reduce the heat to medium and simmer until all the ingredients are tender. Taste and adjust the seasoning; if it’s not salty enough, add 1 Tbsp of Kkanari aekjeot (fish sauce) to enhance the savory flavor and complete your perfect hairtail stew.

Ladle the deliciously cooked hairtail stew into a deep serving bowl. Pour the flavorful broth generously over a bowl of hot rice, then mash the tender radish into the rice. Mixing it all together creates an incredibly satisfying meal. You’ll find yourself finishing your rice in no time!
