  • Ingredient Category : Pork
  • Occasion : Everyday
  • Cooking : Stir-fry
  • Servings : 3 servings
  • Cooking Time : Within 10 minutes
  • Difficulty : Beginner

Main Ingredients

  • 600g Pork (for stir-fry, e.g., pork belly or shoulder)
  • 1/2 Onion
  • 1 Cheongyang chili pepper (or a milder chili if preferred)
  • 1 Green onion

Seasoning

  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 3 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Minced garlic
  • 2 Tbsp Sugar
  • 2 Tbsp Soy sauce (Guk-ganjang or Jin-ganjang)

Cooking Instructions

Step 1

First, prepare the vegetables. Thinly slice the onion into strips. Finely chop the Cheongyang chili pepper and the green onion. The chili pepper will add a pleasant heat, and the green onion will bring a fresh aroma to the dish.

Step 1

Step 2

Now, let’s make the star of this Jeyuk Bokkeum: the seasoning sauce! In a large bowl, combine 3 tablespoons of gochujang, 2 tablespoons of gochugaru, 1 tablespoon of minced garlic, 2 tablespoons of sugar, and 2 tablespoons of soy sauce. Mix everything thoroughly until there are no lumps. Ensuring the sauce is well combined is key to even flavor distribution.

Step 2

Step 3

Heat a frying pan over medium-low heat and add enough cooking oil. Add the chopped green onion and gently stir-fry until fragrant, creating a scallion-infused oil. This step is crucial for building a deep, aromatic foundation for the pork.

Step 3

Step 4

Once the scallion oil is fragrant, increase the heat to high and add the pork. Stir-fry the pork, breaking it up so it doesn’t clump together. Cook until the pork is completely cooked through and slightly browned on the edges. This high-heat cooking helps to sear the meat and release any unwanted odors.

Step 4

Step 5

When the pork is fully cooked, add the sliced onions and chopped chili pepper to the pan. Stir-fry quickly over high heat for about 3 minutes, or until the onions are tender-crisp and slightly translucent. Avoid overcooking, as this can release excess liquid. This rapid stir-frying locks in the flavors and maintains a delightful texture. Serve immediately and enjoy wrapping it in fresh perilla leaves!
