This is a recipe for a smooth, nourishing porridge made with shiitake mushrooms and potatoes, which are easy to digest and packed with nutrients. It’s a simple and comforting meal to make at home with readily available ingredients when you have a poor appetite, feel unwell, or need a nutritional boost for recovery. You can easily prepare this using freshly cooked rice or leftover cold rice.

Porridge Ingredients

  • 5 Dried Shiitake Mushrooms (or 5 Fresh Shiitake Mushrooms)
  • 1 Medium Potato
  • 1/2 Medium Onion
  • 1 Bowl of Rice (cold rice or freshly cooked rice)

Seasoning & Broth

  • 1/2 Tbsp Sesame Oil
  • 1 Tbsp Soy Sauce (or regular soy sauce)
  • Pinch of Salt
  • 3 Cups Dashi Broth (or rice water)

Cooking Instructions

Step 1

First, prepare the shiitake mushrooms, potato, and onion. If using dried shiitake mushrooms, soak them in lukewarm water for about 30 minutes, then squeeze out excess water before using. Finely mince the prepared shiitake mushrooms, potato, and onion. Mincing the ingredients finely will make the porridge smoother and distribute the flavors evenly.

Heat 1/2 tablespoon of sesame oil in a pot over medium-low heat. Add the minced shiitake mushrooms, potato, and onion and sauté for about 2-3 minutes until they become translucent and fragrant. This step enhances the natural sweetness and aroma of the vegetables. Pour in 3 cups of dashi broth and add 1 bowl of rice. Stir well to break up any clumps of rice. Bring to a boil over high heat, then reduce to low heat and simmer for 20-30 minutes. It’s important to stir occasionally to prevent sticking to the bottom. Continue cooking until the rice grains are fully softened and the porridge has thickened.

Once the porridge is cooked and has a soft consistency, stir in 1 tablespoon of soy sauce. Taste and adjust the seasoning with a pinch of salt if needed. Be careful not to over-salt. Turn off the heat, transfer to a warm bowl, and enjoy. You can garnish with sesame seeds or chopped green onions if desired.
