  • Servings : 2 servings

Ingredients (Serves 2)

  • Beef (sirloin or bulgogi cut) 300g
  • Fresh bean sprouts 1/2 bag (approx. 150-200g)
  • Herb salt, to taste
  • Oyster sauce 2 Tbsp

Ssamjang (Optional, for extra flavor!)

  • Doenjang (soybean paste) 1 Tbsp
  • Gochujang (chili paste) 1 Tbsp
  • Maesilcheong (plum syrup) 1/2 Tbsp (adjust for sweetness)
  • Mayonnaise 1 Tbsp
  • Sesame oil 1/2 Tbsp

Cooking Instructions

Step 1

First, let’s prepare the beef for our delicious stir-fry. I chose Australian Chuck Eye Roll steak from the supermarket for its tenderness and rich flavor. You can also use sirloin or bulgogi-cut beef according to your preference.

Step 1

Step 2

Prepare the fresh bean sprouts. Rinse them thoroughly under running water to remove any dirt or debris. After washing, drain them well in a colander. This step is crucial to prevent excess water from making the stir-fry soggy and to maintain the sprouts’ crispiness.

Step 2

Step 3

If you’d like an extra layer of flavor, make a simple ssamjang sauce. In a small bowl, combine 1 Tbsp doenjang, 1 Tbsp gochujang, 1/2 Tbsp maesilcheong for a touch of sweetness, 1 Tbsp mayonnaise for creaminess, and 1/2 Tbsp sesame oil for a nutty aroma. Mix everything well until smooth.

Step 3

Step 4

Now, let’s start stir-frying the beef. Heat a frying pan over medium heat and add the beef. Sear it until both sides are nicely browned.

Step 4

Step 5

Once the beef is golden brown on both sides, use kitchen scissors to cut it into bite-sized pieces. Be careful not to cut them too small, as this can cause the juices to escape.

Step 5

Step 6

Season the beef by sprinkling herb salt over it as it cooks. While regular salt works, herb salt adds a lovely aromatic touch, similar to a steak. Adjust the amount to your liking.

Step 6

Step 7

Transfer the cooked beef to a separate plate for now. This prevents the beef from overcooking and becoming tough when we stir-fry the bean sprouts later.

Step 7

Step 8

Using the same frying pan (no need to wash!), add the prepared bean sprouts, filling the pan generously. Drizzle the 2 Tbsp of oyster sauce evenly over the sprouts. Stir-fry over high heat for about 1-2 minutes, just until the bean sprouts are slightly wilted but still retain their crispness. Avoid overcooking, as they can become watery and lose their crunch.

Step 8

Step 9

Finally, return the cooked beef to the pan with the bean sprouts. Give everything a quick toss to combine the ingredients. Your delicious Beef and Bean Sprout Stir-fry is ready! Serve it hot with a bowl of rice and enjoy this delightful meal.
