Our family loves meat! Tonight, we’re making a special Chashu Rice Bowl using savory pork belly. The tender pork belly and rich, flavorful sauce generously spooned over the rice will create an unforgettable taste.

  • 3 bowls of warm rice
  • 350g pork belly
  • 2 hard-boiled eggs
  • Scallions, as needed (for garnish)
  • Toasted sesame seeds, as needed (for garnish)

Flavorful Braising Sauce

  • 250ml water
  • 6 Tbsp soy sauce
  • 3 Tbsp mirin (sweet rice wine)
  • 2 Tbsp sugar
  • 1 Tbsp minced garlic
  • 1 stalk green onion, cut into large pieces
  • 1/2 onion, thinly sliced

Cooking Instructions

Let’s start by preparing the perfectly boiled eggs that will crown our Chashu Rice Bowl. In a pot, combine 2 cups of water with half a tablespoon of salt. Simmer over medium-low heat for about 10 minutes until the eggs are hard-boiled and firm. Once cooked, rinse them under cold water to cool down.

Now, it’s time to sear the pork belly. Heat a pan over medium-high heat and add the pork belly slices. Sear them until golden brown and slightly crispy on both sides. Don’t worry about cooking them completely through at this stage, as they will continue to cook and tenderize in the braising sauce. Once browned, use scissors or a knife to cut the pork belly into bite-sized pieces.

The star of our Chashu Rice Bowl – the braising sauce! In a pot, combine 250ml of water, 6 tablespoons of soy sauce, 3 tablespoons of mirin, 2 tablespoons of sugar, and 1 tablespoon of minced garlic. Add the large pieces of green onion and the thinly sliced half onion (which will be served on top of the rice). Finally, add the seared pork belly to the pot. Bring to a simmer over medium-low heat and let it braise gently until the flavors meld together and the pork belly is tender.

When braising the pork belly, make sure not to reduce the sauce completely. Reserve some of the flavorful liquid to spoon over the rice, ensuring a moist and delicious bowl.

Now, let’s assemble our magnificent Chashu Rice Bowl! Fill a bowl with warm rice. Generously top the rice with the tender braised pork belly and the sweet, softened onions. Drizzle a bit of the reserved flavorful sauce over everything for extra moisture and taste. Finish by garnishing with the halved boiled egg, chopped scallions, and a sprinkle of toasted sesame seeds.
