Fried Rice Ingredients

  • 400g Rice (cooked and warm)
  • 1/4 Onion (finely chopped)
  • 1/2 Green Onion (finely chopped)
  • 4 Button Mushrooms (finely chopped)
  • 1/5 Carrot (finely chopped)
  • 1/5 Bell Pepper (finely chopped)
  • 10 Vienna Sausages (finely chopped)

Fried Rice Seasoning

  • 2 Tbsp Cooking Oil
  • 2 Pinches Salt
  • Pinch of Black Pepper
  • 2 Tbsp Ketchup
  • 1.5 Tbsp Soy Sauce

Egg Omelet

  • 4 Eggs
  • 2 Pinches Salt

Omurice Sauce

  • 6 Tbsp Tonkatsu Sauce
  • 1 Tbsp Ketchup
  • 1 Tbsp Oligodang (Korean corn syrup)
  • Pinch of Black Pepper
  • 60ml Water
  • 1 Small Piece Butter

Cooking Instructions

Step 1

First, prepare all the vegetables for the fried rice (onion, green onion, mushrooms, carrot, bell pepper) and Vienna sausages by washing them thoroughly and finely chopping them. Chopping the ingredients small ensures they blend well with the rice and are easy to eat.

Heat 2 tablespoons of cooking oil in a pan. Add all the chopped vegetables and sausages. Season with a pinch of black pepper and 2 pinches of salt. Stir-fry over medium-high heat for about 2-3 minutes until the vegetables soften.

Once the vegetables are partially cooked, reduce the heat to medium. Now, add 400g of warm cooked rice, 2 tablespoons of ketchup, and 1.5 tablespoons of soy sauce, and get ready to stir-fry.

Using a spatula, stir and fry the rice and seasonings until well combined. Stir-fry quickly so that each grain of rice is coated with the sauce to create a delicious fried rice. Now it’s time to make the special sauce, the highlight of the Omurice!

In a separate pan, combine all the Omurice sauce ingredients: 6 tablespoons tonkatsu sauce, 1 tablespoon ketchup, 1 tablespoon oligodang, a pinch of black pepper, 60ml water, and 1 small piece of butter. Turn the heat to medium and bring to a simmer.

Stir the sauce with a spoon and let it simmer for another 1-2 minutes until it reaches your desired consistency. Once it bubbles up nicely, turn off the heat to complete the delicious Omurice sauce.

Now, it’s time to make the smooth egg omelet. Crack 4 eggs into a bowl, add 2 pinches of salt, and whisk well. This amount will yield about 3 omelet sheets for a 28cm pan. Lightly oil the pan and then wipe it with a paper towel. This helps the egg mixture spread evenly and thinly, making it much easier to cook the omelet.

Heat the pan over low heat and pour the whisked egg mixture thinly. When the egg omelet is about 70% cooked (the edges start to set), turn off the heat. Carefully place the prepared fried rice in the center of the omelet. Don’t overfill with rice, as it can make shaping difficult.

Now for the key step: shaping the rugby ball! Using a spatula and your hands, gently fold the bottom and side edges of the egg omelet inwards. Think of shaping it like a slice of watermelon.

Fold the remaining top and side edges to complete the rugby ball shape. Make sure the rice is completely enclosed by the egg omelet. Now, it’s time to carefully invert the pan onto a plate for serving. Ensure the side with the rice filling is facing downwards.

Place your serving plate on top of the frying pan. Then, quickly and carefully flip the frying pan over. This is a crucial step, so proceed with caution.
