  • Cooking Time : Within 15 minutes
  • Difficulty : Anyone

Rice Bowl Ingredients

  • 200g fresh salmon fillet
  • 1 onion (or 1.5 if you love onions)
  • 1 bowl warm cooked rice

Special Soy Sauce Dressing

  • 4 Tbsp soy sauce
  • 4 Tbsp water
  • 1 Tbsp vinegar
  • 1.5 Tbsp sugar

Cooking Instructions

Step 1

If you’re an onion lover and want to add more flavor, feel free to use 1.5 onions. The new spring onions are particularly sweet and crisp right now, making them perfect for this dish!

Step 1

Step 2

Prepare one onion by washing it thoroughly and then thinly slicing it into strips. These will add a wonderful texture to your rice bowl.

Step 2

Step 3

In a small saucepan, measure and add 4 tablespoons of water.

Step 3

Step 4

Add 4 tablespoons of soy sauce to the same saucepan to build the savory base of the dressing.

Step 4

Step 5

Pour in 1 tablespoon of vinegar for a touch of bright acidity that balances the flavors.

Step 5

Step 6

Add 1.5 tablespoons of sugar to the saucepan. This will provide a pleasant sweetness that complements the savory and tangy notes. Brown sugar can add a deeper flavor.

Step 6

Step 7

Place the saucepan over low heat and gently simmer until the sugar has completely dissolved. Stir occasionally to prevent sticking, and ensure it doesn’t boil vigorously.

Step 7

Step 8

Once the sugar is dissolved, add half of the thinly sliced onion (about half an onion’s worth) to the sauce. Let it simmer gently until the sauce thickens slightly and the onions become tender. The onions will infuse the sauce with their natural sweetness.

Step 8

Step 9

For the fresh onion topping, soak the remaining thinly sliced onion in cold water for about 10 minutes. This step is crucial for removing any sharp bite and ensuring a crisp texture. Drain thoroughly before serving.

Step 9

Step 10

Remove the cooked soy sauce dressing from the heat and let it cool slightly. It doesn’t need to be completely cold, but avoid pouring it piping hot over the rice.

Step 10

Step 11

Pat the fresh salmon fillet dry with paper towels. Cut it into bite-sized pieces or slices of your preferred thickness. Aim for pieces that are substantial enough not to fall apart easily.

Step 11

Step 12

Transfer 1 bowl of warm cooked rice into your serving bowl. Allow some of the steam to escape so the rice isn’t overly hot. Freshly cooked rice is ideal, but leftover rice warmed up works well too.

Step 12

Step 13

Once the rice has cooled slightly, drizzle 4 tablespoons of the prepared soy sauce dressing evenly over the top. This will lightly season the rice, adding depth and flavor.

Step 13

Step 14

Arrange the softened, simmered onions from the sauce on top of the rice. These sweet, tender onions add a wonderful contrast.

Step 14

Step 15

Neatly place the cut salmon pieces over the rice. The vibrant color and rich texture of the salmon will make your rice bowl look appealing.

Step 15

Step 16

Finally, top the salmon with the drained fresh onion slices. Their crispness will cut through the richness of the salmon beautifully. You can add a little extra soy sauce dressing if desired, or adjust the seasoning to your taste. Enjoy your delicious salmon rice bowl!
