I had accumulated quite a bit of leftover tuna from my child, so I decided to make a hearty tuna kimchi stew with some well-fermented kimchi. This recipe is incredibly simple, taking only 10 minutes from start to finish. Enjoy this delicious and quick meal, perfect for busy days!

Main Ingredients

  • 1 can (approx. 150g) Tuna
  • 1 bowl (approx. 150g) Well-fermented Kimchi
  • 1 ladle (approx. 50ml) Kimchi Brine
  • 1 cup (approx. 200ml) Water
  • 1/4 Onion (approx. 50g)

Cooking Instructions

First, prepare the kimchi. Chop about one bowlful of your well-fermented kimchi into bite-sized pieces. It’s best to cut them into manageable sizes for a pleasant texture.

Slice about 1/4 of an onion thinly into strips. While onion adds a subtle sweetness, using too much can overpower the kimchi’s flavor, so this amount is just right.

In a ttukbaegi (Korean earthenware pot) or a regular pot, layer the chopped kimchi first. Pour in about one ladle of kimchi brine over the kimchi. This helps the kimchi soften and release its flavor.

Now, prepare the tuna. Open one can of tuna, drain off some of the oil, and evenly distribute the tuna over the kimchi.

If you enjoy a spicier kick, finely chop one Korean red chili. This is highly recommended for those who love a fiery flavor in their kimchi stew. (Optional)

Arrange the thinly sliced onions attractively on top of the kimchi and tuna in the pot.

Add all the oil and liquid from the tuna can. The rich, savory oil from the tuna enhances the stew’s overall flavor profile.

Pour in 1 cup (about 200ml) of water, enough to cover the ingredients. You can adjust the water quantity based on your preferred broth consistency.

Add 1 tablespoon of red pepper flakes for a vibrant color and a touch of heat. Adjust the amount according to the spiciness of your kimchi.

Scatter the chopped Korean red chili on top. You can omit this if you prefer a milder stew.
