Apple Pie (Makes 6 servings)

  • 1 egg (for brushing)

Apple Filling

  • 1 apple
  • A little baking soda (for washing apples)
  • 40g sugar
  • 1/2 Tbsp ground cinnamon
  • 1/2 Tbsp lemon juice
  • 1/2 cup chopped walnuts (optional)

Step 1

First, thoroughly wash 1 apple. Since the apple peel is rich in nutrients, we’ll use it. Lightly sprinkle with baking soda or fruit wash, rinse well under running water, and then pat dry.

To easily and cleanly remove the apple core, we’ll use the ‘stick cutting’ method. Cut the apple in half, then stand it up as shown in the photo and slice it into 3 thin strips lengthwise. Be careful to prevent slipping.

After slicing into 3 strips, place them peel-side up. Then, slice them vertically into 5 thin pieces. Slicing them thinly will result in a softer texture when cooked.

When cut this way, they naturally form stick shapes as seen in the photo. Simply remove the core from the center, and you’ll have easy-to-eat apple sticks. Kids will love the cute shape too!

Now, dice the apple sticks into approximately 0.7cm cubes. Cutting them into uniform sizes will ensure even cooking.

Heat a pan over medium-high heat. Add the diced apples, 40g of sugar, 1/2 tbsp of cinnamon powder, and 1/2 tbsp of lemon juice. If you like, add chopped walnuts for extra nuttiness and flavor.

Stir the ingredients with a spatula to combine and cook. Once it starts to boil, reduce the heat to medium and simmer for about 15 minutes. It might look very syrupy at first, but as it cooks, it will thicken and coat the apples beautifully.

Continue to cook, stirring occasionally, until the liquid has evaporated and the syrup has thickened. Turn off the heat and let the apple filling cool completely. Using it while hot might make the bread soggy.

While the apple filling is cooling, prepare the bread slices for the pie. You’ll need 6 slices of bread. First, trim off the crusts neatly.

After trimming the crusts, use a rolling pin to flatten each bread slice as thinly and evenly as possible. Flattening it thinly is crucial for the pie to seal well without opening up when filled and folded.

Place the flattened bread slice on a cutting board. Make cuts on one side only. Create about 4 cuts, each about 2 to 2.5cm long, so that the filling is enclosed when folded in half. Be careful not to cut too deep into the bread.

On the side without cuts, spoon a moderate amount of the cooled apple filling. Be careful not to overfill, as the pie might burst during baking. Adjust the amount according to the size of the bread.

Fold the bread in half over the filling. Press the edges firmly with your fingers to seal. Then, use a fork to press down along the edges, creating a secure seal. A helpful tip: lightly moisten the fork with water before pressing to help the bread stick better and prevent leaks. Work gently to avoid tearing the bread.

Repeat this process to make all 6 bread apple pies. Making them uniform will make them look even more appealing.

Once all the apple pies are assembled, whisk 1 egg and brush the tops of the pies with the egg wash. This will give them a beautiful golden-brown color when baked.

Place the bread apple pies on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C (350°F) for about 13 minutes. (This recipe used a convection oven.)
