  • 1 Tbsp Ground Perilla Seeds (Deulkkae Garu)
  • 1/2 Tbsp Perilla Seeds (Deulkkae)
  • Pinch of Fine Salt
  • 1 Tbsp Lemon Juice
  • 2 Tbsp Oligosaccharide

Chickpeas are quite firm, so it’s best to soak them thoroughly before cooking. Ideally, soak them overnight (about 8 hours). If you’re short on time, soaking for at least 4 hours will also work well.

After soaking the chickpeas sufficiently, place them in a pressure cooker with enough water to cover them completely. Cook over medium heat for about 10 minutes. This process transforms them into tender, flavorful chickpeas, perfect for your salad.

I considered peeling the chickpeas, but decided against it to maintain a pleasant texture in the salad. Now, let’s prepare the ingredients for the dressing. First, measure out 1 tablespoon of ground perilla seeds.

Next, add 1/2 tablespoon of perilla seeds, a pinch of fine salt, 1 tablespoon of lemon juice for a touch of brightness, and 2 tablespoons of oligosaccharide for a mild sweetness. Combine all these dressing ingredients and mix them thoroughly. If the dressing seems too thick, you can add a small amount of the chickpea cooking water to achieve a creamier consistency.

Add the cooked chickpeas to the prepared dressing. Gently toss them to coat evenly, being careful not to mash the chickpeas. Ensure every chickpea is lightly coated with the delicious dressing.
