- 2 Tbsp mirin (rice wine)
- 2/3 cup rice syrup (oligo-dang) (using a paper cup as a measure)
- 3 Tbsp soy sauce
- 3 Tbsp vinegar
- 2 Tbsp mirin (rice wine)
Cooking Instructions
Step 1
Thoroughly washing the fresh nectar peaches is crucial. Rinse them under running water, then add a little baking soda to a bowl of water. Gently massage the peaches in the baking soda solution to ensure a deep clean, effectively removing surface impurities.
Step 2
After washing, remove the stems from the nectar peaches and cut them into bite-sized pieces. You can leave the pits in or remove them as you prefer. Cutting them into larger chunks will provide a more satisfying texture when you bite into them.
Step 3
In a deep bowl or mixing bowl, combine all the ingredients for the soy-glazing sauce: rice syrup, soy sauce, vinegar, and mirin. Stir well with a spoon until the sweetener dissolves and all ingredients are thoroughly mixed. The mirin will help to eliminate any potential ‘green’ flavors and add depth to the aroma.
Step 4
Add the cut nectar peaches to the bowl with the prepared soy-glazing sauce. Gently toss or mix the peaches so they are evenly coated with the sauce. Be careful not to mix too vigorously, as this could cause the peaches to break apart.
Step 5
Carefully transfer the sauced nectar peaches into a clean kimchi container, an airtight storage container, or a sterilized glass jar. For the best flavor, refrigerate the peach soy-glazed pickle for at least one day to allow the flavors to meld and deepen. While it can be enjoyed immediately, allowing it to chill and mature will significantly enhance its taste.
