Fragrant Garlic Chives Salad
Create a simple yet delicious garlic chives salad using fresh buchu! The crisp texture combined with the sweet, sour, and spicy dressing is a wonderful side dish that stimulates the appetite. It’s great as a staple with rice or as a refreshing accompaniment to meat dishes, cutting through richness.
Garlic Chives Salad Ingredients- 1/5 bunch fresh garlic chives (approx. 100g)
- 1/4 onion (small)
- 3 Tbsp chili powder
- 1 Tbsp sugar
- 1 Tbsp plum extract (or syrup)
- 1.5 Tbsp soy sauce
- 1 Tbsp vinegar
- 2 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds (crushed)
Cooking Instructions
Step 1
First, peel the onion and slice it thinly into matchsticks. Soak the onion slices in cold water for about 5 minutes to reduce their pungent flavor and enhance crispness. Squeeze out the excess water before use.
Step 2
Wash the garlic chives thoroughly under running water to remove any dirt or debris. Choosing fresh, vibrant garlic chives is the first step to a delicious salad.
Step 3
Gently shake off excess water from the washed garlic chives. Then, cut them into bite-sized pieces, approximately 4 segments or about 3-4 cm (1.5 inches) long. Place the cut chives into a large bowl.
Step 4
Add the drained onion matchsticks to the bowl with the garlic chives. Now, add all the seasoning ingredients that will define the flavor of your salad. Sprinkle in the chili powder, sugar, plum extract, soy sauce, and vinegar.
Step 5
Finally, add the sesame oil and crushed sesame seeds. Put on clean disposable gloves and gently toss everything together until the seasoning is evenly distributed among the chives and onions. Be careful not to mix too vigorously, as this can bruise the chives. This salad is best enjoyed immediately after preparation!
