  • 100g minced beef (choose a leaner cut for a lighter taste)
  • 2 handfuls oyster mushrooms (tear or slice into bite-sized pieces)
  • 1 red bell pepper (seeds removed, diced)
  • 1/4 head broccoli (cut into small florets)
  • 1/2 onion (sliced or diced)
  • 2 bowls of warm cooked rice

Seasoning & Sauce

  • 1 Tbsp soy sauce
  • 1 Tbsp chopped scallions (green onions)
  • 1 tsp oyster sauce (for added umami)
  • 1 Tbsp minced garlic
  • 2 Tbsp cooking wine (like Mirin, helps tenderize and adds flavor)

Cooking Instructions

First, prepare the vegetables. Dice the onion and red bell pepper into roughly 1.5cm cubes. Cut the broccoli into small florets. For the oyster mushrooms, trim the tough ends and slice them about 2cm long. Cutting the vegetables into similar sizes ensures they cook evenly.

Now, let’s make the delicious sauce for the topping. In a small pot or pan, combine 2 Tbsp cooking wine, 1 Tbsp soy sauce, 1 tsp oyster sauce, 1 Tbsp minced garlic, and 1 Tbsp chopped scallions. Bring this mixture to a simmer over medium-low heat. Stir occasionally until the flavors meld together.

Once the sauce is simmering, add the 100g of minced beef. Break up any clumps with a chopstick or spatula and stir-fry until the beef is no longer pink and has browned slightly. Cooking the beef thoroughly helps release its flavors and remove any gamey smell.

When the beef is about halfway cooked and has lost its pink color, add the prepared onion, red bell pepper, broccoli, and oyster mushrooms to the pan. Continue to cook, stirring well. Cooking over medium-high heat can help keep the vegetables crisp, while simmering over low heat allows the flavors to deepen and meld beautifully into the sauce. Adjust the heat to your preference.
