Cookie Ingredients

  • 120g unsalted butter, softened
  • 60g confectioners’ sugar (powdered sugar)
  • 40g egg yolk
  • 160g cake flour (or all-purpose flour)
  • 20g golden cheese powder

Cooking Instructions

Step 1

In a mixing bowl, cream the softened butter until smooth. Gradually add the confectioners’ sugar and continue to whip until the mixture becomes light in color and fluffy, resembling a creamy consistency. This creaming process is crucial for achieving the cookies’ signature tender and melt-in-your-mouth texture.

Step 1

Step 2

Add the egg yolk to the butter and sugar mixture. Whip thoroughly until well combined and the mixture is smooth and emulsified. Continue whipping until you achieve a stable, glossy cream, similar to the texture shown in the reference image. Ensure the egg yolk is fully incorporated.

Step 2

Step 3

Sift the cake flour and golden cheese powder into the bowl with the creamed mixture. Gently fold the dry ingredients into the wet ingredients using a spatula until just combined. Be careful not to overmix, as this can result in tough cookies. Transfer the dough to a piping bag fitted with a round tip. Pipe the dough onto a baking sheet lined with parchment paper, creating two parallel lines for each cookie. Ensure you leave ample space between the piped cookies, as they will spread during baking.

Step 3

Step 4

Bake in a preheated oven at 180°C (350°F) for approximately 10 to 13 minutes, or until the edges of the cookies are lightly golden brown. Baking time may vary depending on your oven. Keep a close eye on the cookies to prevent them from burning. The ‘plus alpha’ indicates that you might need a little extra time depending on your oven’s performance.

Step 4

Step 5

Once baked, carefully transfer the cookies to a wire rack to cool completely. Once cooled, store the cookies in an airtight container at room temperature, where they can stay fresh for over a week. For longer storage, you can freeze the baked cookies and thaw them later for a delightful treat. Enjoy your homemade golden cheese cookies!
