Gochujang-Kissed Bracken Stir-fry with Plenty of Perilla Powder
A Delicious Bracken Side Dish Using Frozen Bracken and Rich Perilla Powder
We’re turning frozen bracken into a delicious side dish! This recipe features bracken stir-fried with plenty of perilla powder for a nutty, tender result. It’s a healthy and flavorful vegetable dish, perfect as a main side for rice or as a lunchbox addition.
Main Ingredients- 3 handfuls of bracken (thawed and rinsed in cold water)
- 1 Tbsp minced garlic
- 2 Cheongyang peppers
- 1 stalk green onion
- 2 Tbsp perilla powder
- 1 Tbsp cooking oil
- 1 Tbsp sesame oil
Seasoning for Bracken- 3 Tbsp soy sauce
- 3 Tbsp water
- 2 Tbsp tuna extract (or fish sauce)
- 1.5 Tbsp cooking syrup (or corn syrup/honey)
- A pinch of Dasida (optional, for umami)
- 1 Tbsp sesame oil
- 1 tsp toasted sesame seeds
- 3 Tbsp soy sauce
- 3 Tbsp water
- 2 Tbsp tuna extract (or fish sauce)
- 1.5 Tbsp cooking syrup (or corn syrup/honey)
- A pinch of Dasida (optional, for umami)
- 1 Tbsp sesame oil
- 1 tsp toasted sesame seeds
Cooking Instructions
Step 1
Thaw the frozen bracken completely. Once thawed, rinse it thoroughly under cold running water. You should have about 3 handfuls.
Step 2
Prepare the accompanying ingredients for a flavorful stir-fry. This includes 1 tablespoon of minced garlic, 2 Cheongyang peppers, 1 green onion stalk, and 2 tablespoons of perilla powder for that rich, nutty flavor.
Step 3
To make the bracken easier to eat and to help it absorb flavors better, cut it into bite-sized pieces, about 3-4 cm long.
Step 4
Heat 1 tablespoon of sesame oil and 1 tablespoon of cooking oil in a wide pan or wok over medium heat.
Step 5
Once the oil is hot, add the minced garlic and stir-fry for about 30 seconds until fragrant, releasing its aromatic essence.
Step 6
Add the cut bracken to the pan and stir-fry with the garlic-infused oil. Stir-frying it briefly in oil helps to coat it and makes it more tender.
Step 7
When the bracken is lightly stir-fried, add the chopped Cheongyang peppers and green onion. Continue to stir-fry together to add a fresh texture and aroma.
Step 8
While stir-frying to combine everything evenly, add the seasoning ingredients: 3 tablespoons soy sauce, 3 tablespoons water, 2 tablespoons tuna extract, 1.5 tablespoons cooking syrup, and a pinch of Dasida for added umami. Simmer and stir-fry over medium heat for about 3 minutes, allowing the sauce to penetrate the ingredients. Taste and adjust seasoning with more soy sauce or salt if needed.
Step 9
Once the sauce has slightly reduced and is coating the ingredients, add the 2 tablespoons of perilla powder. Toss well to evenly coat the bracken. The perilla powder will release its wonderful nutty aroma as it heats up.
Step 10
Finally, drizzle with 1 tablespoon of sesame oil and sprinkle with 1 teaspoon of toasted sesame seeds. Your delicious and nutty bracken stir-fry with perilla powder is ready! It’s especially wonderful served over a bowl of warm rice.
