  • 1 block firm tofu
  • 1/2 stalk green onion
  • 1/2 medium onion
  • 1 Korean chili pepper (optional, for mild spice)

Braising Sauce

  • 2 Tbsp soy sauce
  • 1 Tbsp fish sauce or anchovy extract
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp minced garlic
  • A little corn syrup or honey (adjust for sweetness)
  • 1/2 cup dashi broth (or anchovy-kelp broth)

Begin by preparing the tofu, which is key to a great braised dish. Gently press the tofu block between layers of paper towels to remove excess moisture. This step prevents oil splattering during frying and helps the tofu achieve a lovely golden crust. Once dried, cut the tofu into bite-sized pieces, about 1-inch thick squares.

Heat a generous amount of cooking oil in a frying pan over medium heat. Carefully place the prepared tofu pieces into the hot oil, ensuring not to overcrowd the pan. Fry the tofu on all sides until it’s beautifully golden brown and slightly firm. This pan-frying process adds a wonderful texture and depth of flavor.

After frying, if there’s excessive oil remaining in the pan, carefully blot it with paper towels. You want to leave a little oil for flavor and to help the sauce adhere, but avoid it becoming too greasy.

Reduce the heat to low. Pour in the 1/2 cup of dashi broth (or anchovy-kelp broth) into the pan. Arrange the thinly sliced onion, diagonally cut Korean chili pepper (if using), and chopped green onion over the tofu and broth. The vegetables will release their natural sweetness and flavor as they cook.

In a separate small bowl, whisk together the soy sauce, fish sauce, red pepper flakes, minced garlic, and a touch of corn syrup or honey until well combined. This is your flavorful braising sauce. Gently pour this mixture over the ingredients in the pan, distributing it evenly.

Cover the pan and let the dish simmer over low heat for about 10-15 minutes, or until the sauce has reduced slightly and coated the tofu beautifully. Gently flip the tofu pieces once or twice during simmering to ensure they absorb the delicious sauce evenly. Your pan-fried braised tofu is now ready!
