Main Ingredients- 1 piece Chicken thigh (approx. 200-250g)
- 2 bunches Oyster mushrooms
- 1/2 Zucchini
- 1/2 Leek
- Red chili pepper, to taste (for color)
Seasoning & Others- 3 Tbsp Olive oil
- 2 Tbsp Soy sauce
- 1 Tbsp Grated ginger or julienned ginger
- 1 Tbsp Plum extract (Maesil Cheong)
- 1 Tbsp Toasted sesame seeds

Cooking Instructions
Step 1
First, rinse the oyster mushrooms under running water, drain them well, and then tear them lengthwise into bite-sized pieces.
Step 2
Cut the zucchini in half lengthwise, then slice it into approximately 3cm thick pieces. Slice the leek into thick strips. If using red chili pepper, remove the seeds and julienne it for a vibrant touch of color.
Step 3
Heat 3 tablespoons of olive oil in a pan over medium-high heat until shimmering. Add the chicken thigh pieces and stir-fry over high heat until the surface is golden brown. This step helps to lock in the juices, ensuring the chicken remains tender.

Once the chicken is mostly cooked on the outside, add the julienned or grated ginger. Stir-fry for a minute until fragrant, which helps to eliminate any gamey odor from the chicken. The ginger’s aroma complements the chicken beautifully.

Add the prepared zucchini, oyster mushrooms, and leek to the pan. Stir-fry quickly over high heat with the chicken, ensuring the vegetables retain a slight crispness.

Pour in 2 tablespoons of soy sauce and 1 tablespoon of plum extract. Add the julienned red chili pepper, which was prepared earlier. Stir everything together well, ensuring the sauce evenly coats all the ingredients. Adding the red chili pepper at this stage helps preserve its bright color.
