Today, I’ll show you how to make a delicious stir-fry with enoki mushrooms, known as the ‘cleanser’ for our bodies, which help lower cholesterol levels and are perfect for dieting. Enoki mushrooms can be cooked in many ways, but today I’ll share a simple and quick recipe for a fantastic side dish. Its chewy texture and savory flavor will surely make it a hit with your meals!

Main Ingredients

  • 1 Enoki mushroom (approx. 100g)
  • 1/4 Onion (approx. 27g)
  • 1/5 Carrot (approx. 41g)

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Wash and peel the carrot and onion, then thinly slice them into strips. Trim the tough base of the enoki mushrooms. Gently rinse the mushroom caps under running water. It’s crucial to drain them completely; placing them in a colander and patting them dry with paper towels will prevent the stir-fry from becoming watery.

Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the carrot strips and stir-fry until they soften slightly. Season with a pinch of salt, then transfer to a separate plate to cool. Add a little more oil to the same pan and stir-fry the onion strips until they become translucent. Season with a pinch of salt here as well, and set aside on a plate with the carrots. Finally, add a little oil to the pan and stir-fry the drained enoki mushrooms. Season the enoki mushrooms with a little salt while cooking.

Once the enoki mushrooms have wilted and started to turn lightly golden, add the pre-stir-fried carrots and onions back into the pan. Sprinkle in the sesame seeds and black pepper, then gently toss everything together until well combined. This step allows the ingredients to meld their flavors for a richer taste.

Finally, taste the enoki mushroom stir-fry and add more salt if needed to adjust the seasoning. Once all the ingredients are well mixed and the flavors have come together, turn off the heat. Plate attractively for a delicious enoki mushroom side dish! It’s perfect to enjoy with warm rice or as a side for your bento box.
