  • 3 dried cucumbers (oiji)

Seasoning

  • 1 Tbsp chopped scallions
  • 4 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 1 Tbsp sugar
  • A pinch of sesame seeds
  • 1 Tbsp sesame oil

Cooking Instructions

Lightly rinse the dried cucumbers (oiji) under running water. If they are too salty, soak them in cold water for about 5 minutes, or rinse them well and then squeeze out excess water. Slice them diagonally into bite-sized pieces (about 0.5 cm thick) for better presentation. Place the sliced oiji in a bowl.

The saltiness and sweetness of dried cucumbers can vary by brand. It’s crucial to taste a piece of oiji before adding seasonings to adjust the flavor accordingly. Typically, add 1 Tbsp of sugar and 4 Tbsp of gochugaru (Korean chili flakes) for a pleasant spiciness.
