- 0.5 Tbsp oligosaccharide or corn syrup (7.5ml)
- 1 Tbsp cooking wine (e.g., mirin) (15ml)
- 1 Tbsp oyster sauce (15ml)
Cooking Instructions
Step 1
First, thoroughly wash and prepare all the ingredients for your rice bowl. Proper preparation is half the battle!
Step 2
Let’s make the key to a delicious rice bowl: the Chinese-style sauce! In a small bowl, combine the water, soy sauce, oligosaccharide, cooking wine, and oyster sauce. Mix well until no lumps remain. Preparing this in advance will make the cooking process much smoother.
Step 3
Now it’s time to prep the vegetables and imitation crab. Wash the onion and bell pepper, remove the seeds, and julienne them into strips about 0.5cm thick. Gently shred the imitation crab sticks lengthwise into strands. Crack the eggs into a separate bowl and beat them with a fork or chopsticks. (These eggs are for scrambling).
Step 4
Heat a skillet over medium-low heat with a generous amount of cooking oil. Add the chopped green onions and stir-fry until fragrant. Once the aroma of the green onions starts to develop, pour in the beaten eggs. Stir rapidly with chopsticks to scramble the eggs as they cook. Once the eggs are cooked into curds, mix them with the green onions and set aside on one side of the pan.
Step 5
In the same pan, add the julienned onion, bell pepper, and the shredded imitation crab. Stir-fry over medium heat until the vegetables glisten slightly and become tender. Doesn’t the combination of colorful vegetables and imitation crab look appetizing already?
Step 6
Once the vegetables and imitation crab are partially cooked, pour all the Chinese-style sauce you prepared earlier into the pan. As the sauce comes to a boil, gradually add the pre-mixed slurry (cornstarch and water) in 2-3 additions, stirring until you achieve your desired thickness. Once the sauce has thickened, turn off the heat and finish by drizzling in 1 Tbsp of sesame oil for aroma. Serve generously over warm white rice and enjoy!
