Main Ingredients

  • 100g Cooked Rice
  • 70g Frozen Shrimp, peeled and deveined
  • 1 Fresh Egg
  • 20g Onion, finely minced
  • 20g Zucchini, finely minced
  • 10g Enoki Mushrooms, trimmed and chopped
  • 20g Scallions (green parts), finely chopped

Seasonings and Others

  • 1 Tbsp Low-Sodium Soy Sauce (baby-friendly)
  • 1/2 Tbsp Cooking Sake or Mirin (to reduce shrimp odor)
  • 1/3 Tbsp Minced Garlic
  • 1/2 Tbsp Oyster Sauce (for kids, optional)
  • 1/2 Tbsp Sesame Oil
  • Unsalted Butter (or cooking oil)

Cooking Instructions

Step 1

Thaw the frozen shrimp by letting them sit at room temperature or rinsing them under cold water. Pat the thawed shrimp dry with paper towels. Marinate them with 1/2 Tbsp of cooking sake or mirin to eliminate any fishy smell, then set aside for a few minutes.

Step 1

Step 2

Finely mince the onion, zucchini, enoki mushrooms, and scallions. Wash them thoroughly. Heat unsalted butter (or cooking oil) in a pan over medium-low heat. Sauté the minced vegetables until fragrant. The butter will melt and bring out the natural sweetness of the vegetables.

Step 2

Step 3

Add the marinated shrimp to the pan with the sautéing vegetables. Cook them together. For baby food, it’s important not to overcook the ingredients to maintain their texture. Since the vegetables are finely minced, you can cook the shrimp and vegetables together simultaneously, which saves cooking time.

Step 3

Step 4

Once the vegetables and shrimp are partially cooked, add 100g of cooked rice. Use a spatula to break up any clumps of rice and mix it thoroughly with the other ingredients. Stir-fry gently to ensure the rice grains are evenly distributed.

Step 4

Step 5

Now it’s time to add the seasonings. Pour 1 Tbsp of soy sauce around the edges of the pan; this helps to caramelize it slightly and add depth of flavor. Stir-fry it into the rice and vegetables.

Step 5

Step 6

Add 1/2 Tbsp of oyster sauce. Oyster sauce adds umami, but for babies, it’s recommended to use it sparingly or omit it altogether. Mix it well with the rest of the ingredients.

Step 6

Step 7

Finally, drizzle in 1/2 Tbsp of sesame oil for a fragrant finish. Stir-fry everything together until well combined. Ensure each grain of rice is coated with the seasoning for maximum flavor.

Step 7

Step 8

Lightly beat 1 egg and pour it into the pan, spreading it over the rice mixture. As the egg begins to set and become fluffy, gently mix it into the fried rice. Eggs are a great source of protein for babies, but if your baby has an egg allergy, you can omit it or substitute it with another protein source.

Step 8

Step 9

Transfer the deliciously stir-fried shrimp and egg fried rice to a serving bowl. Present it nicely, and your simple yet nutritious meal for your little one is complete! Enjoy the happy moment watching your baby enjoy their meal.
