Main Ingredients- Somen noodles 200g (serves 1-2)
- Savory and Sweet Soy Sauce Dressing
- 3 Tbsp soy sauce (preferably seasoned soy sauce)
- 1.5 Tbsp plum extract (maesilcheong) for sweetness
- 1 tsp cooking ginger juice
- 1 Tbsp raw perilla oil (deul-gireum) for nutty aroma
- 1 Tbsp sesame oil
- Special Toppings
- Crunchy Wasabi Carrot Raphia
- Savory Sprinkles: Poring Sprinkle cheese powder
- Protein Boost: 1 hard-boiled egg
Cooking Instructions
Step 1
Bring a generous pot of water to a rolling boil. Add the somen noodles and cook according to package directions. Once cooked, drain the noodles and rinse them under cold running water. To enhance their chewy texture, gently rub the noodles with your hands as if washing laundry. This step helps make them extra springy and firm.
Step 2
While the noodles are cooking, let’s prepare the flavorful soy sauce dressing. In a mixing bowl, combine the seasoned soy sauce, plum extract, cooking ginger juice, raw perilla oil, and sesame oil. Whisk everything together thoroughly until well combined and any sugar or corn syrup is fully dissolved. You can add a touch more sugar if you prefer it sweeter.
Step 3
Add the drained and well-rinsed somen noodles to the bowl with the prepared dressing. Gently toss the noodles with the sauce until they are evenly coated. Be careful not to break the noodles while mixing; a gentle touch is key!
Step 4
Finally, artfully arrange the sauced noodles in a serving bowl. Generously top with the crisp and refreshing wasabi carrot raphia, and sprinkle with the savory Poring Sprinkle cheese powder for an extra layer of flavor. Add a halved hard-boiled egg on the side for a complete and nutritious meal. Enjoy your delicious Soy Sauce Bibim Guksu!
